Chickpea Salad Recipe
Ingredients
1 can chickpeas
1 cucumber, peeled and finely chopped
1 cup grape tomatoes
1/2 cup sweet onion
1 tablespoon crushed garlic
1/4 teaspoon dried basil
1 tablespoon Parmesan cheese
2 tsp olive oil
3 tbsp balsamic vinegar
1/2 tsp kosher salt
Directions
In a large bowl, mix together all ingredients. Drizzle with olive oil and balsamic vinegar, and season to taste with salt. Mix until well combined, and adjust seasoning as needed. Refrigerate at least 1 hour before serving. Serve chilled.
