Vegan Muffin Breakfast

Going vegan had never been so simple! This wonderful recipe will make everyone want to become one, or at least give a try to this great lifestyle!

Raspberries, are packed with antioxidants and  a natural energy booster. The white chocolate adds just the right of sweetness to this delicious, yet very healthy recipe!

This makes up to 6 medium muffins, so it is perfect for you and your family!

 

Ingredients:

2 cups plain flour
1/2 cup caster sugar
2 teaspoon baking powder
1/4 teaspoon sea salt
1 cup almond milk or rice milk
1/4 cup melted vegan margarine
1 heaped teaspoon corn flour
1 teaspoon vanilla extract
1 cup vegan white choc chips
1 cup fresh or frozen raspberries (or any berry you like!)

 

Directions:

Preheat the oven to 200°C.

Combine the flour, baking powder, sugar and salt.

Pour the milk. Add margarine, corn flour and vanilla extract and stir.

Finally pour the berries and chocolate chips.

Place the mixture in a muffin pan and bake for 25 minutes. Enjoy!
