Oatmeal Pumpkin Muffins

non-stick cooking spray
1 cup all-purpose flour
1 cup white sugar
2 teaspoon kosher salt
2 teaspoon pumpkin pie spice
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground nutmeg
2 cups pumpkin puree
1 cup milk
3 eggs, beaten
1/2 cup maple syrup
Preheat oven to 350 degrees F while preparing the cooking spray for the muffin cupps.

Whisk all-purpose flour, sugar, salt, pumpkin pie spice, baking powder, baking soda, and nutmeg together in a large bowl. Set aside.

Mix pumpkin puree, milk, eggs, and maple syrup in a separate bowl until thoroughly blend and until batter is smooth.

Scoop batter into prepared muffin cups.

Bake in the oven until a toothpick inserted into the center of a muffin comes out clean, 20 to 30 minutes; set aside to cool 5 to 10 minutes before serve.
