Veggie Turkey Meatloaf

1 1/4 lb ground turkey
1 medium yellow onion, diced
1 large zucchini, shredded
1 large celery stalk, finely chopped
3 medium carrots, shredded
1 red bell pepper, finely chopped
1/2 lb mushrooms, chopped
4 garlic cloves, minced
3/4 cup old fashioned rolled oats
1/2 cup unsweetened applesauce
2 tbsp tomato paste
1/4 cup fresh parsley, finely chopped
1/4 cup liquid egg substitute
1/2 tsp paprika
1 tsp salt
1 tsp black pepper

Veggie Turkey Meatloaf

Preheat oven to 350 degrees F, in a nonstick skillet saute vegetables and garlic with a small amount of olive oil or cooking spray, mix all ingredients together in a large bowl, place into loaf pan (or cupcake pan) and bake for 70 minutes. Enjoy!
