Salmon and Sweet Potato Frittata Recipe

Salmon and Sweet-Potato Frittata
Ingredients

4 tbsp olive oil

4 large sweet potatoes

2 onions

2 lbs skinless salmon filet

6 large eggs

1/4 glass whole milk

2 glasses melted cheddar

2 tsp salt

dark pepper

Directions

High temperature broiler to 375º F.

Cook the sweet potatoes and onion mixing,around 5 minutes.

Include the salmon. Cook through.

Whisk together the eggs, milk, cheddar, salt, and a couple pepper.  Blend.

Prepare the frittata for 20 minutes or until set. Put in a plate. Cut into two
