Quinoa and Black Beans Recipe

Quinoa and Black Beans


3 teaspoon vegetable oil
2 onions
4 cloves garlic
1 cup quinoa
2 cups vegetable broth
1/4 teaspoon cayenne pepper
salt and ground black pepper to taste
1 cup frozen corn kernels
2 (15 ounce) cans black beans
1/2 cup chopped fresh cilantro
Prepare cooking oil in a pan and heat over 10 minutes.
Mix quinoa with vegetable broth, add cayenne pepper, salt, and pepper. Let it boil for 20 minutes, cover and simmer it.
Add cilantro and frozen corn into the mixture and stir for about 5 minutes; mix in the black beans and cilantro.

Serve and enjoy!
