3 large eggs
2 cups organic brown sugar
1 cup honey
3 1/2 cup (12 0z) crushed pineapple
1 cup of fresh milk
1/2 cup of melted butter
1/2 cup raisins
4 cups flour
5 tsp. cinnamon
4 tsp. baking soda
Preheat your oven to 375 degrees Fahrenheit and prepare your muffin tins, you can brush it with butter or you can make use of paper liners.
To prevent the raisins from drying, its best that we plump them first. In a microwave-safe bowl, pour raisins and enough water to cover them.Put the bowl in the microwave on high for just a minute. Let it steep and set aside.
Whisk together egg, brown sugar, pineapple, milk, honey, and melted butter in a large bowl.
Add in the the cereal and let it soften for 5-10 minutes.
Combine flour, cinnamon and baking soda thoroughly in another bowl before mixing them together into the wet ingredients.
Empty water from raisins and stir it gently into the muffin batter.
Divide the batter evenly into the muffin cups. You can garnish your muffins by dusting it with a pinch of dry cereal.
Pop them in the oven for 16-18 minutes. You can test by inserting a toothpick in the center of your muffins.
