Perfect Brunch Idea: Sweet Potato Parmesan Gratin
Have you heard of the breakfast of champions? Well, how do you feel about a brunch for champs? This is the perfect hot and cheesy meal for a Sunday brunch that will leave you full till dinner time. The best part? It is healthier than your average gratin yet just as satisfying.
All you need is:
• 2 organic thin sliced sweet potatoes
• 1 small red or yellow potato
• ¼ teaspoon of sea salt and freshly ground pepper
• 1 teaspoon of fresh chopped thyme
• ¾ cup of finely grated Parmesan cheese
• 2 cups low-fat milk
So, it is already 11:00am and you don’t know what to do? This recipe is perfect, delicious, and yet extremely easy.
First preheat the oven to 400 degrees F, and place the sliced potatoes in a bowl and season to taste, add the thyme and half of the cheese to toss together. Then pour milk till it covers the potatoes and bake for 30 minutes. Remove from oven and drain (not all, just enough). Sprinkle the rest of the remaining cheese and bake for 45 more minutes (until milk is absorbed). Let rest for 20 minutes before serving. Enjoy!
