Mini Lasagna Cups

Ingredients:

1/2 lb ground beef
1/4 cup chorizo sausage, chopped
pinch of cumin
salt and pepper to taste
1/4 cup spaghetti sauce
1/2 cup cheddar cheese, shredded
3/4 cup ricotta cheese
12 wonton wrappers
chopped basil for garnish

 

Directions:

Preheat oven to 375 F degrees.

In a skillet, add the ground beef and cook until it’s no longer pink. Season with cumin, salt and pepper.

Add the chorizo sausage and spaghetti sauce and cook for another 5 minutes, over medium heat.

Coat a 12 cup muffin tin with cooking oil. Make sure you spray it well.

Arrange a wonton wrapper and add a tablespoon of ricotta cheese in each cup.

Then take a heaping tablespoon of the meat mixture and add to each cup.

Finally top some cheddar cheese, you can’t miss the cheddar cheese.

Bake for 10 to 15 minutes. Garnish with basil.

Serve warm.
