Lemon Drizzle Cake

Ingredients:

3  large eggs
3 cups  flour
1 1/2 cups powdered sugar
1/4 cup of melted butter
1/8 cup level baking powder
1 lemon juice

For the crunchy lemon icing:

75grams confectioners’ sugar
2 squeezes of lemon juice
and vanilla extract

Directions:

Get your oven ready by turning on the heat to 350ºF.

Prepare loaf tin, wax paper as liner.

Cream together butter and sugar until light and soft. Add in the eggs and lemon juice

Sift together flour and baking powder into the mixture and stir until combined. Pour the batter into the pan.

Place it in the oven for about 30 minutes until the bread turns golden, and soft when touched.

Blend together sugar and lemon juice for your lemon icing. Drizzle generously over the still warm cake.

Let the cake cool for awhile before lifting the cake out of the loaf pan.
