Indian Butter Chicken Recipe

Ingredients:
1 onion, chopped
2 tablespoons freshly grated ginger
2 garlic cloves, minced
1 jalapeno, seeded and minced
1 tablespoon olive oil
2 teaspoon garam masala
1 teaspoon chili powder
1 teaspoon ground cardamom
1/3 teaspoon ground coriander
1/2 cup tomato paste
2 1/2 cups chicken broth
1/2 cup heavy cream
2 bay leaves
1 1/2 pounds boneless, skinless chicken breast or thigh, cut into small cubes
1/2 teaspoon freshly grated pepper
1 teaspoon salt
1/4 cup unsalted butter
2 to 3 lime wedges
A handful of cilantro, chopped

Directions:

Using a little olive oil, saute onions, jalapeno, ginger, and garlic over medium-high heat, for 5 minutes. Stir in garam masala, chili powder, cardamom, and coriander.  Cook for another 2 minutes.

Transfer the onions into the food processor and pour chicken broth and tomato paste. Process until the mixture is smooth and put it back in the pan.

Pour in heavy cream and bay leaf; and let it come to a boil, stir frequently. Reduce the heat and simmer for 5 to 7 minutes, until the sauce is reduced to around 3 cups. Transfer sauce into a large bowl and set aside.

Pat the chicken dry with paper towels and season generously with salt and pepper.  Over medium high heat, melt a tablespoon of butter in a pan and brown the chicken for 3-4 minutes. Pour sauce into the pan and continue cooking until the chicken is done.

Add the remaining butter and stir until it has melted into the sauce.Squeeze lime overthe sauce and sprinkle with cilantro. Best serve with basmati rice and enjoy!
