Vegetable Lasagna Recipe
2 packages lasagna noodles
2 lbs fresh mushrooms
1 cup green bell pepper, chopped equally
1 cup chopped large green onion
4 garlic, diced
4 tbsp olive oil
2 packages pasta sauce
1 jar ricotta cheese
5 cups mozzarella cheese
3 large fresh eggs
Directions
Cook the lasagna noodles according to instructions. set aside
COmbine mushrooms, green peppers, onion, and garlic and cookin6 minutes . Add pasta sauce and let it boil. let it cool after 2 minutes
Mix together ricotta,mozzarella cheese, and eggs. in a separate bowl.
Preheat oven to 350 degrees F. Spread tomato sauce into the bottom of a greased 8×4 inch baking dish. Layer 1/2 each, lasagna noodles, ricotta mix, sauce, and Parmesan cheese. Repeat layering, and top with remaining mozzarella cheese.
Bake, uncovered, for an hour. Let it cool for 15 minutes before serving.
