Small Fish Fillet Recipe
Ingredients
4- to 6-ounce pieces boneless, skin-on striped bass, cold burn, pollock, or mackerel or boneless, skinless catfish
legitimate salt and dark pepper
Directions
Set up the flame broil.
Season the fish with ¼ teaspoon each one salt and pepper. Flame broil, revealed, skin-side up (if the skin is on), until brilliant tan, 4 to 6 minutes.
Turn and flame broil until hazy all through.
Present with Tomato and Pesto Sauce, Harissa Mayo, Thyme and Orange Marmalade, or Caper-Parsley Tapenade
