Baked Potato
All you need is:
- 3 Baking potatoes
- Olive Oil
- 1/2 cup sour cream
- Garlic Salt & Pepper
- Low fat cheddar cheese or smaller amounts sharp cheddar, shredded
- 3 Eggs
- 1/2 cup red onion, chopped
- Nitrate free Turkey Bacon, cooked and crumbled
Bake the potatoes at 400° until they are tender (about 1 hour) cut each potato in half, scoop out the pulp, leaving 1/4 inch shell, and let them cool. Meanwhile mash the pulp with olive oil, sour cream. Fill the potato halves with the mixture, add one egg to each, sprinkle red onion and cheese over the top, place them in the oven for 30 minutes at 400 degrees. Makes 6 servings.
