1/3 cup graham cracker crumbs
1 tbsp white sugar
1 tablespoon melted butter
8 oz. package cream cheese
1/2 cup confectioners sugar
1 1/2 teaspoons lemon juice
1/4 teaspoon vanilla extract
Preheat oven to 325 degrees F (165 degrees C). Grease a 6-cup muffin pan.
Mix the crushed graham cracker, sugar, and butter in a bowl. Spread equally in and press firmly in a muffin cup. Bake for 5 minutes, then remove to cool.
Beat together the cream cheese, sugar, lemon juice, and vanilla until smooth and fluffy before adding the egg.
Pour the cream cheese mixture into the muffin cups. Bake at 325 degrees F (165 degrees C) for 25 minutes. Cool the cheesecakes completely before removing. Refrigerate before serving.
