All you need is:
- 2 Tablespoons reduced-sodium soy sauce
- 1 1/2 teaspoons wasabi powder (see Note)
- 1/2 teaspoon honey
- 1 pound salmon fillet, skinned (see Tip)
- 2 scallions, finely chopped
- 1 egg, lightly beaten
- 2 tablespoons minced peeled fresh ginger
- 1 teaspoon toasted sesame oil
Begin by whisking soy sauce, wasabi powder and honey in a small bowl until smooth.
Chop the salmon into ¼ inch pieces, then transfer into a big bowl, mix and combine with the scallions, egg, ginger and oil, and divide into 4 patties, coat a large nonstick skillet with cooking spray and heat over medium, add the patties and cook for 5 minutes, turn and cook for 5 more minutes. Pour the wasabi glaze over the patties and cook for 30 seconds.
Serve between two whole-wheat buns and accompany with salad of greens, carrots, radishes and sprouts. Your family will thank you!
