Pumpkin Pancakes Recipe
2 cups of fresh milk
1 cup pumpkin concetrate
2 fresh eggs
3 tbsp vegetable oil
3 tbsp vinegar
3 cups all-purpose flour
4 tbsp brown sugar
3 tsp baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
In a large bowl, mix together the fresh milk, pumpkin concentrate, fresh eggs, vegetable oil and vinegar. Combine the remaining ingredients together, and mix well in a separate bowl. Add into the pumpkin mixture just enough to combine.
Heat frying pan over medium high heat with a little oil in it. Pour or scoop the batter onto the griddle, for each pancake. Brown on both sides and serve hot. You can top it with chocolate or maple syrup or make a cinnamon swirl on top of the pancakes. Enjoy your breakfast!
