Mexican Pork Loin and Carrots
Ingredients

1/4 kl carrots
4tablespoons olive oil
1 pound porkmeat
1 tbsp salt
1 avocado
4 tablespoons plain yogurt
4 tablespoons fresh lime juice
Directions

Preheat oven to 450° F.

Dribble the carrots with oil on a rimmed baking sheet. Season the pork with the cumin and ½ teaspoon salt. Settle the pork in the carrots.

Put it in the oven. Stirring and turning the carrots but flipping the pork only once, until the center of the pork reaches to 145° F,  25 minutes.

In a small bowl, blend the avocado, yogurt, and salt.

Serve the pork and carrots.
