Maple, Banana, and Pecan Muffins Recipe
Ingredients:
3 cups of whole wheat flour
3 tsp baking soda
3 tsp baking powder
2 tsp sea salt
3 large eggs
½ cup honey
6 large mashed bananas
6 tbsp maple syrup
1 cup applesauce
3 tsp vanilla extract
1 cup chopped pecans
Directions:
Preheat your oven to 450 degrees. Prepare your muffin pan by lining it with paper cups or using non-stick cooking spray.
In a large bowl, filter together the flour, baking soda, baking powder and salt and set aside.
In another bowl, blend together egg, honey, mashed bananas,maple syrup, applesauce and vanilla.
Add in the banana mixture into the bowl containing the dry ingredients. Mix in the pecans but leaving a few extra for your toppings later.
Spread the batter into the prepared muffin pan, putting just 2/3 full then sprinkle the remaining chopped pecans.
Pop them into the oven for around 25 minutes. Use toothpick to test. Enjoy!
