Macaroni and Cheese Recipe
1 pound elbow macaroni
1 tablespoon butter
1 jalapeño, finely chopped
2 tablespoons all purpose flour
1 cup milk
1 tablespoon coarse-grain mustard
2 cups sharp cheddar, ground (1/2 pound)
1/4 cup Parmesan, ground
Directions
Prepare the macaroni as stated in the package instructions. Drain it well and set aside.
In a medium skillet, melt the butter over medium heat. Sauté the jalapeño for 1 minute, then add in the flour. Cook and stir for 2 minutes.
Pour in the milk and let it simmer.
Add in the mustard and cheeses. Combine until smooth.
Pour the cheddar sauce over the macaroni and toss to incorporate the sauce. Serve hot or chill.
