Light Cheese and Bacon Baked Stuffed Potatoes
This recipe is a perfect appetizer for any party or family dinner, and the best part is, we are making it as healthy as possible, so everyone will leave completely satisfied! My first tip to you is to buy the ingredients as fresh as possible, our body processes everything better when is natural rather than manufactured and processed, so instead of the regular greasy bacon we are using nitrate free turkey bacon. Pork bacon or Prosciutto is great too. Remember it is all about the flavor, but as in everything in life, all things in moderation.
All you need is:
Baking potatoes
Olive Oil
Garlic Salt & Pepper
Low fat Sour Cream or plain Greek yogurt
Low fat Cheddar Cheese or smaller amounts sharp Cheddar
Finely chopped Chives and green onions
Nitrate free Turkey Bacon, cooked and crumbled
Bake the potatoes at 400°, until they are tender (about 1 hour), cut each potato in half, scoop out the pulp, leaving 1/4 inch shell, and let them cool. Meanwhile mash the pulp with olive oil, sour cream, cheese, bacon and the rest of ingredients, remember you can put as many as you want, just make sure they are fresh tasty.
Finally fill the potato shells and place them in the oven for 30 minutes. Serve and enjoy!
