Huevos Rancheros
Huevos Rancheros is ideal for breakfast or brunch on the weekends, too. Serve with a fresh fruit salad and enjoy a great start to your day!
Ingredients
2 T. canola oil
4 small corn tortillas
1 c. homemade or purchased salsa
1 c. refried beans
8 eggs
½ c. crumbled queso fresco or shredded Monterey jack cheese
1 T. minced fresh cilantro or parsley
Salt and freshly ground black pepper
Directions
Preheat the oven to 200°F. Heat oil in a large nonstick skillet over medium-high heat until shimmering.
Fry tortillas in a single layer (in batches, if necessary) until light golden. Transfer to a plate lined with paper towels.
Add the salsa to the skillet and stir until heated through.
Dip each tortilla in the salsa until covered and transfer to an oven-safe dish. Place the tortillas in the oven to keep warm.
In a small pot or in a microwave-safe dish, heat refried beans, stir occasionally until heated through.
Meanwhile, coat a medium skillet with nonstick cooking spray and heat over medium-high heat. Add 4 eggs to the pan and cook until the whites have set and the yolks are cooked as desired (cover the skillet for harder yolks).
Transfer to an oven-safe plate and keep warm in the oven. Repeat with remaining 4 eggs.
To assemble, place one tortilla on each plate. Spread ¼ c. refried beans evenly on top of the tortilla. Top with 2 cooked eggs. Around the edge of the eggs, spoon additional salsa.
Sprinkle with cheese and fresh herbs, and season to taste with salt and pepper.
