Heart Shape Fried Egg

Ingredients:
- 5 Large Eggs
- 2 tbsp Carrot, chopped into fine chunks or minced
- 2 tbsp Scallion, chopped fine or minced
- 2 tsp Red Pepper Flakes
- salt to taste
Directions:
In a bowl, lightly beat the eggs and take out 2 tablespoons of the egg and set it aside.
Season the remaining eggs with salt. Add your carrots, the scallions and pepper flakes. Stir them thoroughly.
Heat the oil in your frying pan and pour a quarter of the egg mixture.
Gently roll your scrambled eggs to the side of the pan and pour another quarter cup of the mixture into the pan.
Then again, gently roll the scrambled eggs to one side, totally enveloping your previous roll. Repeat until you’re done with the whole mixture.
Remove it from the pan and let it cool for 5 minutes.
Slice your rolled fried eggs into an inch thick.
To make the heart shape. Take a slice of your rolled fried eggs and cut it diagonally. Flip one of the diagonal cuts over, put them together and you have your heart.
Dip your heart shaped eggs into the 2 tbsp of eggs you’ve set aside earlier and put them back into the pan.
Pour a few egg mixture into the middle of your heart-shaped eggs to seal the pieces together.
Flip them over and viola. Enjoy!
