Grilled Eggplant With Parsley Recipe
Ingredients
3 tbsp pine nuts
4 medium eggplants
3 tbsp olive oil
1/2 container vinegar
3 tsp seed
salt and dark pepper
3 tablespoons leaf parsley
Directions
High temperature broiler to 350° F.
Drop eggplant with oil, and fry for 10 minutes. Throw the eggplant with the remaining ¼ glass of oil, the vinegar, fennel seed, 1 teaspoon salt, and ½ teaspoon pepper. Let marinate for 30min to 8 hours, your choice. Just before serving, top with the parsley and pine nuts. Enjoy!
