Crispy Tilapia
Ingredients:
3 lbs tilapia fillets, about 10
1/3 cup flour, for dusting fish
1 egg
1/2 cup buttermilk
1/2 cup flour
1/2 cup yellow cornmeal
salt
pepper
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 tablespoons Old Bay Seasoning
canola oil, to cover bottom of large pan
Directions:
Season the fillets with salt and pepper. Dust them with 1/3 cup of flour.
Combine egg with buttermilk in one bowl.
In a separate bowl, mix the 1/2 cup flour, cornmeal, baking soda, baking powder, and Old Bay seasoning
Dip the floured fish fillets into egg and then roll them into the flour mixture.
Heat oil in large pan over medium high heat. Fry your fillets, for 2 minutes. Flip them over and cook the other side for another 2 minutes.
Sprinkle them with salt as soon as you take out of pan.
Transfer them into a lined plate, let them cool slightly.
Serve and enjoy!
