Chocolate Coconut Cookie Bars

Ingredients

2 cups of all-purpose flour
1 cup brown sugar
1 cup unsalted butter, melted
3 cups finely shredded coconut
1 can condensed milk
2 large eggs, beaten
10 oz. chocolate chips
1 cup heavy cream

Directions

Prepare an 8-inch square pan by lining it with parchment paper, let it overhang on both sides. Heat your oven to 350 Fahrenheit.

Mix the flour and and sugar in a bowl. Stir the melted butter into the mixture to combine. Press the dough evenly into the prepared pan and bake until turns a very light brown, around 20 minutes. Let it cool for 10 minutes.

Beat together the eggs, condensed milk and shredded coconut. Pour it evenly over the crust. Put it back in the oven for 25 minutes or until it turns a light golen color. Let it cool completely

Using the microwave, melt the chocolate  for around 30 seconds. Stir the chocolate and microwave for another 30 seconds until the chocolate is completely melted. Set aside.

Pour heavy cream into a saucepan and cook until just about boiling point. Make sure to stir it frequently. Stir in the chocolate until well combined and texture is smooth. When the coconut layer is completely cooled. Dust it with peanuts and evenly spread the chocolate on top.

Pop it in the refrigerator for an hour to harden the chocolate. When ready, slice the cookie into bars. Serve and enjoy!
