Cheesy Mushroom Tortillas Recipe

Ingredients

4 tbsp butter
2 pounds mushrooms, rinsed, half cooked and sliced
1 green onion, sliced
1 pound large tomatoes, sliced
A pinch salt and pepper (to taste)
1 1/2 pounds melted cheese, shredded ( I use quick melt cheese)
12 inch flour tortillas ( 10 pcs)

Directions
Preheat oven to 300 degrees F and prepare and 8×8 baking dish.

Melt butter in a pan and add immediately  the mushrooms, onion, tomatoes, salt and pepper, and mix well until they are soft.

Warm the tortillas 2 to 3 minutes using the oven. Fill the tortillas with Quick Melt cheese, and reserve some cheese for toppings. Roll the filled tortillas and place them seam side down in the baking dish. Mix it with vegetables prepared. Top with remaining cheese.

Bake in the preheated oven 20-30 minutes or until cheese is melted and bubbly.
