Baked Apricot Chicken

Ingredients

8 Chicken thighs
1 cup apricot preserves
1 cup Catalina salad dressing
1 (1 ounce) package dry onion soup mix

 

Directions

Preheat oven to 350 degrees F.

Combine 1 cup apricot preserves, 1 cup Catalina dressing, and 1 (1 ounce) package onion soup mix.

Line a 13×9″ baking pan with heavy duty foil, or double line the pan with regular foil.

Place chicken pieces skin side down in foil lined dish and pour apricot mixture over chicken. Bake, uncovered, in the preheated oven for 90 minutes.

Flip chicken over so the skin side is up and turn the broiler on high. Broil for 3-5 minutes until skin is as crispy as you like it! Enjoy!
