Banana Cranberry Bread

Banana Cranberry Bread

Ingredients:

  • 3 cups white sugar
  • 1 cup shortening
  • 4 eggs
  • 4 mashed bananas
  • 1 ½ cup cranberry sauce
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 4 cups all-purpose flour

Directions:

  1. Preheat oven to 175 degrees C.
  2. Lightly grease two 9×5 inch loaf pans.
  3. In a large bowl, cream together the sugar and shortening until light and fluffy.
  4. Beat in eggs, and mix in bananas, cranberry sauce, milk, and vanilla.
  5. In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, and nutmeg.
  6. Gradually blend flour mixture into the banana mixture. Pour into the prepared loaf pans.
  7. Bake for 60 – 80 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 – 15 minutes, then turn out onto a wire rack, and cool completely.
