Vegan Chocolate Chip Cookie Bite Recipe
1 can of cooked chickpeas
4 tablespoons of organic honey
1/8 cup of baking soda
1/2 cup melted peanut butter
2 teaspoons pure vanilla extract
1 cup semi-sweet chocolate chips
3 cups dark chocolate chips
Instructions
Prepare and combine chickpeas, honey,baking soda, melted butter,and vanilla. Mix together until well blended. Pour mixture into bowl.
Add semi-sweet chocolate chips to the bowl , mix together until completely combined, smooth and peaks form. Using a spoon, take the blended chocolate and make a round form using the palm of your hand. Place all the chocolate ball on the prepared baking sheet .
Refrigerate the pan for 2-3 hours . Before taking out the pan, melt the dark chocolate chips in a microwave and dunk each cookie dough into the melted chocolate and place back on the baking sheet.
The cookie can last up to 1 week if place in a refrigerator.
