Creamy Pumpkin Pasta Recipe
10 ounces of linguine pasta
6 cups of vegetable broth
2 cups of pumpkin puree
3 tablespoons of oil, much preferably olive oil
1 medium onion
5 big cloves of garlic
1/2 teaspoon of red pepper flakes (crushed)
1 teaspoon of sea salt
1/4 teaspoon ground black pepper, you can add more to taste and 5 ounce fresh goat cheese
Instructions:
Use large heavy pot to mix all of the ingredients but set aside the goat cheese.
boil it over high heat for 10 minutes.
to avoid sticking in the bottom of the pot, stir it frequently.
Turn off the heat when pasta and sauce reached a creamy or slightly thick consistency.
Slice up the goat cheese into small pieces and stir it gently to combine it with the pasta.
Leave it for 5-6 minutes then stir it again.
You can put an additional salt and pepper to your desired taste.
Place it into serving bowls and add parsley on the top for garnish.
