Couscous With Apricot Vinaigrette Recipe
Ingredients
2 cups of couscous
1/2 cup apricot
5tablespoons olive oil
5 tablespoons wine vinegar
1 tsp salt and black pepper
4scallions, chopped
1/2 cup roasted almonds
Directions
Pour 2 cups of hot water on the couscous in a bowl. Cover for 5 minutes.
Pour the apricot in a small saucepan cook, beat in the oil, vinegar,salt, and pepper to taste.
Put couscous grains in a separate bowl and combine with the scallions, almonds.
Serve!
