Winter Vegetable Minestrone Recipe
3 tablespoons olive oil
3 medium onions
salt and pepper to taste
1 can tomatoes
1 squash
4 carrots
1 can canellini beans
1 piece Parmesan
1 cup pasta
1 Savoy cabbage
Directions
Sauté onion over medium heat, season with ¾ teaspoon salt and ¼ teaspoon pepper. Sweat until soft and translucent, 10 minutes.
Add in the tomatoes and cook. Toss in the squash, carrots, beans, 6 cups water, and Parmesan skin. Let it simmer, until the vegetables are done, 25 minutes.
Add the pasta and cabbage. Garnish with Parmesan and serve.
