Banana Muffins Recipe
Ingredients
2-3 medium sized, overripe bananas
1/2 cup white sugar
1 large egg, slightly beaten
1/4 cup unsalted butter, melted
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 1/2 cup flour
1/4 cup dried, shaved, coconut
1 tsp vanilla or coconut extract
Directions
Preheat oven to 375 degrees. Grease a 12 cup muffin pan and add paper muffin cups.
Beat the bananas, sugar, egg, butter, extract and salt until smooth.
In a separate bowl combine baking powder, baking soda and flour. Mix thoroughly.
Add flour mixture 1 tablespoon at a time to the banana mixture, and mix thoroughly.
Fill each muffin cup 3/4 full.
Add 1 teaspoon of coconut to the top of each muffin, if desired. Press the coconut lightly into the batter.
Bake for 20 minutes at 375 degrees F or until a toothpick inserted in the middle of the biggest muffin comes out clean. Enjoy!
