Black Rice and Quinoa Salad
Ingredients
1 cup black rice
1 cup red quinoa
1 lemon
1 tea each salt and pepper
2 cloves of garlic, minced
1/4 cup olive oil
1/4 water
2 tablespoons honey
1/2 cup dried apricots, diced into 1/4 inch pieces.
1/2 cup chopped pistachios
1/4 cup cilantro
*arugula, spinach, or other salad greens
Directions
1. Bring two medium pots filled half way with water to a boil. Add quinoa to one pot and rice to another. Reduce each to a simmer; cook rice for 20 minutes and quinoa for 12minutes. Drain each in a separate colander all allow to cool completely.
2. Zest lemon; add zest, juice of lemon and salt and next 4 ingredients through honey to a very large bowl. Whisk together thoroughly. Add rice, quinoa, apricots, pistachios and cilantro, stir thoroughly. Serve at room temperature.
