Bacon Pistachio Crusted Scallops

Ingredients

8 strips bacon cooked & crumbled – (reserve a small amount of bacon grease in the pan & set aside)
¼ cup pistachios
1 tbsp green onions
1 tbsp fresh rosemary
1 tsp kosher salt
1 tsp black pepper
12-15 large scallops

 

Directions

Combine the bacon, pistachios, green onions and rosemary in a small food processor (or blender). Blend for 10-15 seconds, or until well combined.

Place the mixture on a plate or in a shallow bowl. Sprinkle both sides of each scallop with salt and pepper.

Coat each side of the scallop with the bacon pistachio mixture.

Place the skillet with bacon grease back on the stovetop over medium heat and add the scallops.

Cook for 3-4 minutes per side.
