Crunchy Vegetable Nuggets
INGREDIENTS:
1kg Mashed Potato
2-3 Cups of Frozen Mixed Vegetables (Peas, Carrot, Corn, Etc)
Salt and Pepper
2 Eggs (Lightly Beaten)
1 Cup of Flour
2 Cups of Corn Flakes (Finely Crushed)
DIRECTIONS:
Combine mashed potato and mixed vegetables into a bowl. Season with salt and pepper.
*You can cook your vegetables and put them in a food processor so its less detectable to kids.
Grab a spoonful of mashed potato mix and shape them into nuggets.
Roll it into the flour then dip it into the egg and finally toss it into the cornflakes. Make sure to shake off the excess coating.
Place your nuggets into a lined dish, cover with cling wrap and pop them into the fridge. Chill for 30 minutes.
Fry them up until they’re cooked through and turn a nice golden color.
