Sausage Soup

Ingredients

1 lb hotdog, hot (or combo of mellow and hot), expelled from housings

1 sweet onion, diced

3 carrots, diced

2 celery stalks, diced

2 cloves garlic, minced

1/2 C sherry

1 can diced tomato (14.5 oz)

8 oz tomato sauce

6 C vegetable stock

8 oz egg noodles

6 oz spinach, new

Directions

In a huge pot, over medium/high hotness, cook frankfurter, blending to separate as it cooks. Cook until seared. Include onion, carrots, celery and cook 4-5 minutes, until veggies are beginning to mellow. Include garlic. Cook 1 moment.

Spill in sherry and cook 2 minutes.

Include tomatoes, tomato sauce and vegetable stock. Heat to the point of boiling.

Include egg noodles and decrease hotness to medium. Cook until noodles are delicate, around 10 minutes.

Mix in spinach and keep on cookking, just until withered, around 2-3 more minutes.

Serve hot.

Present with dried up bread if fancied.
