Salmon Cakes

Salmon Cakes

Ingredients:

  • 2 cans salmon, skin and bone removed, drained and flaked
  • 4 eggs
  • 1 juiced lemon
  • 2 tablespoon chopped capers
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper
  • 24 saltine crackers
  • 2 tablespoon bread crumbs, or as needed
  • 2 tablespoon butter
  • 2 tablespoon olive oil

Directions:

  1. Stir together salmon, eggs, lemon juice, capers, salt, black pepper, and cayenne pepper in a bowl until well-combined.
  2. Crush saltine crackers with your hands into the salmon mixture and mix well.
  3. Wrap the bowl with plastic wrap and refrigerate overnight.
  4. Dust a plate with half the bread crumbs. Divide salmon mixture into 8 portions and shape into patties; place onto prepared plate and sprinkle remaining bread crumbs atop the salmon patties.
  5. Melt butter and oil in a large pan over medium heat. Cook patties in hot oil about 5 – 6 minutes per side.
