Mushroom pie Recipe

Mushroom Potpie
Ingredients

7 tablespoons olive oil

2 pounds mushrooms

4 carrots

5 celery stalks

3 onion

salt and dark pepper

3 cups flour

1 cup vegetable soup

1 cup peas

 

Directions

Preheat oven to 400° F.

Heat 2 tablespoons of the oil in a large skillet over medium temperature. Add mushrooms, carrots, celery, onion, thyme,salt, and pepper. Cook, stir occasionally, until the vegetables are just tender.

Add in the flour and include the vegetable soup and peas; let it boil.

Put the dish on top of a rimmed baking sheet and bake until the pastry turns golden. Let it rest for 15 minutes prior to serving.
