4- to 6-ounce pieces boneless, skin-on striped bass, cold burn,fish.
kosher salt and ground pepper
Set up the flame broil.
Season the fish with ¼ teaspoon each one salt and pepper. Flame broil, revealed, skin-side up (if the skin is on), until brilliant tan, 4 to 6 minutes.
Turn and flame broil until hazy all through.
Present with Tomato and Pesto Sauce.
