Black Bean Mushroom Burgers

 Ingredients

1 can black beans
2 cups of mushrooms, cleaned and chopped finely
2 large eggs,  beaten
2 green onions, sliced
5 garlic cloves, sliced
2 cups of whole wheat breadcrumbs
4-6 whole wheat hamburger buns

 

Directions

Using a small pan, over medium high heat, fry onion, garlic, mushrooms, salt until tender. Set aside.

Thoroughly, mash the black beans in a large bowl. Add the eggs and breadcrumbs into the mixture. Add a pinch of sea salt and pepper to taste.

Form mixture into  6 patties. Let them chill for at least 30minutes.

Arrange the patties on a lightly sprayed pan and bake them in a preheated oven, 250 Fahrenheit. It will take atleast 30 minutes to cook the patties.

Assemble your burger using your choice of toppings and sauce ( depends on your choice)

Add cheese on top of the patties and bake for another 5 minutes for a cheesier option. Enjoy!
