    Ingredients

    1/2 cup Greek Yogurt
    2 egg whites
    1/2 tsp. vanilla extract
    1/2 cup whole wheat pastry flour
    1/2 tsp. baking soda
    1 tsp. sugar
    1/8 tsp. salt
    1/8 tsp. cinnamon
    1/2 cup mixed berries
    2 Tbsp. greek yogurt
    1 dash cinnamon
    1 drop vanilla extract

    Directions

    Step 1
    Preheat oven to 350 degrees F.

    Spray muffin pan with cooking spray.

    Step 3
    In an electric blender, beat together greek yogurt, egg whites, vanilla extract, baking soda, sugar, salt, cinnamon and flour. Process until the batter is smooth.

    Step 4
    Pour pancake batter in the muffin pan and bake for about 11 – 15 minutes until pancakes is slightly puffed and set. Let it cool slightly.

    Step 5
    In a small bowl blend together 2 tbsp. yogurt, dash of cinnamon and a drop of vanilla extract.

    Step 6
    Top the pancakes with yogurt topping and berries. Enjoy!
